Afternoon tea isn't afternoon tea without scones. A basic glutenous recipe closely matches a baking powder biscuit that is slightly sweet and comes in a variety of flavors. This recipe is thanks to cooking genius' of the authors of this blog. Check it out and pre-order their new recipe book, Gather. This is my adaptation of the recipe.
Orange Zest Scones with chocolate orange glaze
Ingredients:
- 2 cup Blanched Almond Flour
- 1/4 cup Arrowroot Flour, Plus 2 Tbsp
- 1/2 tsp Salt
- 2 tsp Baking Powder
- 2 Tbsp Maple Syrup, Grade B
- 1/4 cup Coconut Oil, Organic
- 1 Egg
- 2 tsp Orange, Zest
Directions:
- Preheat oven to 350 degrees.
- In a medium sized mixing bowl, combine almond flour, a quarter cup of arrowroot flour, salt,baking powder and orange zest.
- In a smaller mixing bowl, combine maple syrup, melted coconut oil, and one egg. Blend with a hand mixer until smooth.
- Pour wet ingredients into dry, and blend until all ingredients are evenly combined..
- If needed, add two tablespoons of arrowroot flour to the batter to thicken the dough.
- Line a baking sheet with parchment paper. Form dough into a ball. Place the ball of dough on the parchment lined baking sheet and flatten to approx 3/4 inch thickness.
- Cut the dough into pie wedges making 8 pieces.
- Bake for 20 minutes.
- Cool on cooling rack.
- After cooling drizzle with chocolate orange glaze(recipe below)
Chocolate Orange Glaze
Ingredients:
- 1/2 cup Enjoy Life semi-sweet chocolate chips
- 1 tsp coconut oil, organic
- 1/4 tsp orange extract
Directions:
- Melt chocolate chips and oil in a double boiler.
- Once melted stir in orange extract.
- Drizzle over cooled scones and let chocolate set.
